With the vision to become Australia’s leading integrated resort company, our properties at The Star Sydney, The Star Gold Coast and Treasury Brisbane are world-class tourist destinations and home of some of Australia’s most awarded restaurants and bars, event centres, luxurious five-star accommodation and a truly world-class spa and casino.Commissary Often referred to as the Heart of House, the Commissary kitchen is our culinary foundation, responsible for producing hot and cold items for our renowned restaurants and culinary offerings here at The Star.The Role Working in large scale production you will be creating dishes for some of our most well-known outlets including: G&Tea lobby lounge , Antidote café and Flying Fish and Chips.Most importantly you will be part of catering for our most valuable guests, by providing daily meals for our 2,000+ The Star Sydney team members.The ideal candidate should have experience in a fast-paced kitchen and production environment and furthermore, should also be comfortable with the challenges of a large-scale production kitchen. You will demonstrate a passion, enthusiasm and flair in the culinary space.Based on experience and preference you will be working primarily in cold or hot production. The main requirements of the role are: Hold relevant tertiary qualifications, such as Certificate III in Commercial CookerySolid experience as a Junior Sous Chef / Senior Chef de PartieComprehensive knowledge of food hygiene and ability to maintain high level of hygiene within the kitchenExperience working in a busy, fast-paced kitchen environment (experience in a commissary or large production kitchen preferred)The ability to effectively and efficiently co-ordinate and work as part of the teamAbility to work varied shifts, including weekends and holidays Duties will include: Produce high quality cold food items including; salads, sushi, sandwiches and canapesProduce high quality hot food items including: Sauces, Dressings and interTrain staff at lower levels and coach and direct employees to perform to Kitchen OperationsBe accountable for overseeing a section of the kitchenHandle and follow up all incidents immediately, and report accuratelyMaintaining food cost to parameter given by the companyHave thorough menu, product, portion control and preparation knowledge. Apply a sound knowledge of the following: - local requirements, market needs, competition - trends, recipes, daily specials and availability of products.
