You will demonstrate a passion, enthusiasm and flair in the culinary space.Based on experience and preference you will be working primarily in cold or hot production. The main requirements of the role are: Hold relevant tertiary qualifications, such as Certificate III in Commercial CookerySolid experience as a Junior Sous Chef / Senior Chef de PartieComprehensive knowledge of food hygiene and ability to maintain high level of hygiene within the kitchenExperience working in a busy, fast-paced kitchen environment (experience in a commissary or large production kitchen preferred)The ability to effectively and efficiently co-ordinate and work as part of the teamAbility to work varied shifts, including weekends and holidays Duties will include: Produce high quality cold food items including; salads, sushi, sandwiches and canapesProduce high quality hot food items including: Sauces, Dressings and interTrain staff at lower levels and coach and direct employees to perform to Kitchen OperationsBe accountable for overseeing a section of the kitchenHandle and follow up all incidents immediately, and report accuratelyMaintaining food cost to parameter given by the companyHave thorough menu, product, portion control and preparation knowledge. Apply a sound knowledge of the following: - local requirements, market needs, competition - trends, recipes, daily specials and availability of products.
